FRESH SEAFOOD
SHRIMP

Local North Carolina shrimp there are around 26 to 30 shrimp per pound, making them a great size for peel-and-eats, grilling, or pasta dishes. We recommend 1/4 pound per person if having as an appetizer, 1/3 pound if serving over pasta or shrimp tacos, 1/2 – 1 pound per person if steaming for peel-and-eats or grilling.
SEA SCALLOPS

Fresh 10-20 count dry-packed New Bedford sea scallops, these are excellent pan-seared or wrapped with bacon and grilled. We recommend 1/4 pound per person if having something alongside or 1/2 pound if this your main protein.
LITTLENECK CLAMS

Fresh hard clams, approximately 1.5” across. This size is preferred for pasta dishes or steamed with butter or white wine and herbs. Clam serving recommendations vary – you really need at least a dozen per person, but you can get away with a half dozen if you are having some other seafood alongside them. If you are steaming them and enjoy clams, we would strongly advise two dozen per person. We strongly recommend soaking them in room temperature tap water for 30 minutes before cooking to remove any residual sand. If you are making a clam sauce – we like to steam the clams separate. Pour off the broth and use this in your sauce– this ensures no sand is in the final dish.
LUMP BLUE CRAB MEAT

Fresh North Carolina blue crab meat, we get lump in fresh several times a week but highly recommend ordering ahead – as it sells out very quick. One pound of crab will make approximately 4 – 6 crab cakes depending on your patty size. This is sold in one-pound containers only – we are unable to break it into half pounds, but it does freeze well!
FISH FILLETS

Fresh fish is caught by local commercial boats and is subject to seasonal availability, weather conditions, and quota/trip limits. Our offshore boats target Grouper, Tile, Tuna, Mahi and our inshore boats target, when open, Flounder, Drum, Sheepshead, Spanish Mackerel, Bluefish, etc. All fish is landed and reported by permitted commercial fishing vessels from the Outer Banks. It is bought, sold and reported under Federal Fisheries Gulf and South Atlantic Dealer Permit #1861, Greater Atlantic Federal Permit #3800, and North Carolina Fish Dealer License # D-1179597. We recommend 1/3 pound per person if having something else alongside or 1/2 pound if this your main protein.
FROZEN SEAFOOD
SNOW CRAB LEGS

(price per pound) Extra large snow crab clusters, each one is around 12 ounces. These are sustainably harvested in the North Atlantic by Native Canadian boats. Steam them in a large pot or saucepan, like steaming broccoli. They are steamed before freezing (crab meat will stick to the shell if frozen raw!) so you are just heating the legs up, about 7-10 minutes. You know they are done when the large claw is too hot to hold onto. We recommend one cluster per person if serving other protein or two clusters if featuring crab legs!
JONAH CRAB CLAWS

These large claws come off New England Jonah crabs, you may have heard of their more famous Floridan cousin, the stone crab. these are the northern cousin to Florida’s stone crab! Caught in the cold waters off Maine, fishermen harvest one claw and through the crab back so they can regenerate the loss. These are triple scored, so no mallets are needed to break them open. Steam as you would broccoli in a large saucepan for around 7 minutes. We recommend 1/4 to 1/2 pound per person if serving other seafood or one pound each if featuring crab claws.
BAY SCALLOPS

Dry packed bay scallops harvested by Wanchese Fish Company, these are the super sweet small scallops. Approximately 80-120 penny size pieces in a pound. These are excellent lightly dusted with seafood breader and fried or pan sautéed for a pasta dish. We recommend 1/4 - 1/3 pound per person if having as an appetizer, serving over pasta, or serving other proteins. 1/2 per person if frying.

Small bites of cornbread with pieces of sweet corn throughout, pop them in the oven for 7-10 minutes at 400 degrees – but do not forget to shake the cookie sheet every few minutes to prevent burning!

BLUE CRAB DIP

Fresh local blue crab is folded into a cream cheese base with fresh green onion and house spices. It can be enjoyed cold or pop in the oven for a few minutes with cheese on top. Serve with crackers or toasted baguette rounds. We recommend 1/4 pound per person at least, if you are crab fans probably 1/3 – 1/2 pound per person.
YELLOWFIN TUNA SALAD

Yellowfin Tuna is locally caught then poached in house and blended with fresh herbs, onion, and just enough celery for a good crunch. This salad depends on the availability of fresh tuna so call to inquire. We recommend 1/4 pound per person at least, if you are tuna fans probably 1/2 pound per person. 1/2 pound is enough for two modest sandwiches or a roll of ritz crackers. Offering depends on seasonal availability of fresh tuna - check our online store for status.
SPICY SHRIMP DIP

Local shrimp is minced with fresh jalapeno and crispy bacon. This thick and rich spread is excellent on crackers or toasted bread. SHRIMP AND CRAB ENCHILADAS

Local shrimp is mixed with fresh lump crab meat and a blend of cheeses then rolled in a flour tortilla. A thick white cream sauce accompanies the enchilada along with a side of pickled jalapenos and more cheese for topping. Everything is house-made all you need to do is bake the enchilada for 30 minutes and enjoy. We recommend one enchilada per person and they are excellent served with a crisp veggie or green salad. SHRIMP AND CRAB CHIMICHANGAS

Local shrimp and fresh lump crab meat from Garland Fulcher Seafood is blended with cheese then folded into a flour tortilla. Everything is house-made all you need to do is pan fry the chimichanga for a few minutes until golden brown. These have the same filing as the enchilada but are a lighter option – we send home pickled jalapenos, salsa, and sour cream for serving. We recommend one enchilada per person and they are excellent served with shredded lettuce, tomato, and avocado on top! CRAB CAKES

Fresh lump crab meat from Garland Fulcher Seafood is blended with just enough mayonnaise and a squeeze of lemon juice. These are then hand pattied out and coated with crispy panko breadcrumbs. Everything is house-made all you need to do is pan-fry them for a few minutes per side – but only flip once, these are pure crab and tend to fall apart if over handled. We recommend one to two crab cakes per person and they are excellent served as a sandwich or on their own. Due to high demand, stock may be limited - check our online store for availability.

Local North Carolina shrimp these are a large with around 21 to 25 shrimp per pound, steamed and served warmed unless noted to chill. Spiced with Old Bay (classic seafood seasoning), Cajun (more garlic with a kick) or left plain. Always served with our housemade cocktail sauce. We recommend 1/3 pound per person if having as an appetizer, 1/2 pound if having something else alongside, or a full pound if this is your main protein.

Build Your Own Seafood Boils
Seafood Boils are created fresh daily therefore we ask for advance ordering of one day before to secure your seafood and pick-up time. A southern coastal feast, our seafood boil is fully prepared by us all you must do is pour it out on a covered table and enjoy! To build your own seafood boil first figure up how many people (we count 2 kids as one adult!) From here figure out what seafood you would like and how much by using our guidelines below! The recommended serving size is offered in a range so if you are getting just one or two seafood items or are starved for seafood go for the higher amount. If you would like an “everything boil” or are light eaters go for the smaller amounts.
